Bran Bread


Sundays were made to relax, eat good food and be a little bit naughty. Sundays are my favourite days. I do not remove myself from the sofa, I read, I write and just generally be the laziest bum. But who cares! Everyone needs a day of rest

My treat today was a hazelnut latte and vegan bran bread. Totally sweet and delicious! The perfect Sunday accompaniment!


1 cup of bran flakes
1 cup of almond milk
1 cup if buckwheat flour
1 cup of dried fruit
1/4 cup of argave syrup
1/4 cup of honey
1 teaspoon of baking powder
1 teaspoon of bicarbonate of soda


Soak the bran flakes in the milk for at least 30 minutes

Once most of the milk has been absorbed, add the rest of the dry ingredients.

Stir until all of the mixture has been incorporated

Line a loaf tin with coconut oil and add the mixture

Bake at 180 degrees Celsius for 25 minutes.

Try not to eat it all at once!!
